Preheat the oven to 350 degrees F.

Use a mandolin to slice each zucchini thinly. Dry with paper towel and squeeze out as much moisture as you can without tearing the slices.

Place in a bowl and toss with olive oil, salt, and pepper to coat each chip. Line a baking tray with parchment paper or a silicone baking sheet. Lay out the slices. Bake for 10 minutes, then flip and bake for 5 to 10 more minutes.

Suggestions for different flavors:
Salt and vinegar: Add 1 tbsp white vinegar when tossing with olive oil. Or spritz with malt vinegar at the end.
Southwestern: Add 1/2 tsp smoked paprika and 1/2 tsp chili powder when tossing with olive oil.
Garlic: Add 1/2 tsp dried or crushed garlic when tossing with olive oil.
